I take some water, maple syrup, salt, pepper and some speed curing salt ( Prague powder#1) mix it all together ( salt and pepper pretty much to taste the only thing I measure is the speed cure) then I let the pork belly soak in there for 3-5 days. Then I smoke to an internal temp of 145.
